stats_manager_unittest: refactor tests to make tests more readable

This a small issue, but stats_manager_unittest.py should be refactored to
(1) have simple & consistent naming scheme for domains and file names
(2) remove populate_dummy & using just enough sample for each test case, to make it easier to understand each test individually without having to read more.
