This scanner is well-supported by SANE. I use it on Linux all the time. Since we're using SANE for our scanning backend, it seems like it should be possible to make it work on Chrome OS.
After upgrading to the latest sane-backends, the scanner does work over the network if I set the IP manually in /etc/sane.d/epson2.conf. Need to look into why autodetection doesn't work next.
