Enable extra masking in and integrity checking in V8 for crash analysis.

We want to enable extra masking and integrity checking in V8 for future, more informative crash analysis.

This should be hidden behind a flag and be enabled via Finch.

Finch config:

- Only Canary for a start, let's see if the performance costs and the added complexity is worth it for now.
- 50 % Active
- 50 % Control
