Please unpin Chrome from the task bar and kill all the Chrome processes listed under Windows task manager and see if Un-installation works. You can also delete Chrome folder from 'C:\Users\xxx\AppData\Local\Google' for clean un-installation.

Please feel free to raise a new issue if the issue is reproducible with latest chrome builds.

Thanks...!!
I had to use an alternate method for uninstalling Chromium, within the local files folder. At this point I am still unsure if Chromium is actually uninstalled. I still have an occasional sighting of something related to chromium.
