[Payments] Log multiple events in the journey logger.

These events were previously not logged on Desktop.

Recommendation is to wait until M61. If you think otherwise, please let me or bustamante@ know. 

We'll keep this feature enabled in M60 beta (not Stable). Therefore it would be great to add these few metrics to assess the performance of the feature. If you look at the CL, it's just a few lines.
