Issue description
UserAgent: Mozilla/5.0 (Windows NT 6.3; WOW64) AppleWebKit/537.36 (KHTML, like Gecko) Chrome/51.0.2704.103 Safari/537.36
Platform: 8172.61.0 (Official Build) dev-channel lars test
Steps to reproduce the problem:
1. Install stable partner image onto DUT (I used latest: R51 - 8172.61.0).
2. Open Chrome browser.
3. a) Go to Settings -> About Chrome OS.
OR
b) Go to chrome://version.
4. Observe the channel text for 'Platform'.
What is the expected behavior?
Channel text for 'Platform' should mention 'stable'.
What went wrong?
Channel text for 'Platform' mentions 'dev'.
Did this work before? N/A
Chrome version: 51.0.2704.106 Channel: stable
OS Version: 51.0.2704.106
Flash Version: Shockwave Flash 22.0.0.192-r1
This also appears in the R50 - 7978.74.0 stable partner image for Lars.

I wonder if this is just an issue because you are using a test image. Are recovery images fine?

Yes, I booted the latest R52 - 8350.74.0 recovery stable image and it shows 'stable-channel' instead of 'dev-channel'. It may be an issue only with the test images, as you said.
