Simple Cache: clean up file size calculating methods

The format of the simple cache keeps getting more complicated (alarmingly!). The methods used to figure out data sizes from file sizes etc..., are getting increasingly badly named. The methods all assume one stream per file, don't consider the presence/nonpresence of key SHA256 data, etc...

Let's clean them up so that the file reading code is actually readable.
